How to Make a Halal Snack Pack at Home

The halal snack pack is one of the few genuinely Australian contributions to world cuisine, and it deserves better than a soggy home attempt.

The whole thing lives or dies on one detail, and it isn't the meat.

It's the chips

A proper HSP has chips that stay crisp under the weight of everything on top. Soft chips turn the whole tray to mush within about ninety seconds.

That means thick-cut and cooked hard: deep-fried, or oven-baked at 220°C until they're genuinely golden rather than merely cooked. Undercook them and nothing else you do matters.

What you'll need

Serves 2 · 30 minutes

600g thick-cut chips

500g halal doner or shaved kebab meat (lamb, chicken, or a mix)

100g shredded cheese, mozzarella or a pizza blend

Garlic sauce

Chilli sauce

Barbecue sauce

Optional: sliced red onion, tabbouleh, jalapeños

Method

1. Cook the chips until properly crisp. Do not rush this.

2. While they're going, fry the kebab meat in a hot dry pan until the edges catch and crisp up. You want colour on it, not just heat through.

3. Tip the chips into a foil tray and scatter the cheese over while they're still hot. The residual heat melts it into the chips rather than leaving a cold layer on top. This is the step people skip.

4. Pile the meat over the cheese.

5. Sauce it: garlic, chilli and barbecue, in that order, in stripes across the top. Be generous. A timid HSP is a sad thing.

6. Eat it immediately, out of the tray, with a fork.

The cheese debate

Cheese under the meat or over it? Under. Direct contact with hot chips is what melts it properly, and meat on top keeps the heat in.
